Khaman Dhokla Recipe

Preparation time- 5 mins
Cook time- 15 mins
Total time- 20 min.


Ingredients 

For Batter

● 1.5 cups gram flour (besan)
● 1 tablespoon semolina (rava) 
● 3 teaspoon ginger-green chillies paste, 1 inch ginger + 2 green chilies crushed in a mortar-pestle
● 2 to 3 pinches turmeric powder(haldi)
● 1-2 pinch asafoetida (hing)
● 2 teaspoon eno fruit salt
● Salt as require
● 1 teaspoon lime juice
● 1 cup water or add as required- the amount of water required depends on the quality of gram flour. so add as required to make a thick yet flowing batter.


For Tampering

  • 2 tablespoon oil
  •  cup water
  • 1 teaspoon mustard seeds (rai)
  • 1 teaspoon cumin seeds (jeera) 
  • 2 teaspoon white sesame seeds(safed til)
  • 1 sprig curry leaves, about 8 to 10 curry leaves (kadi patta)
  • 1 green chilli, chopped
  • 1 teaspoon lime juice
  • 2 teaspoon sugar

For Garnish

  • 2 tablespoon chopped coriander leaves (dhania patta)
  • 2 tablespoon grated coconut




Method

Making khaman Dhokla Batter

  1. Grease a steamer pan with 1/4 to 1/3 tsp oil.
  2. Take 1.5 cups besan (gram flour) in a mixing bowl.
  3. Add 2 to 3 pinches of turmeric powder, a generous pinch of asafoetida, 1 tsp lime juice and 3 tsp ginger-green chillies paste and salt.
  4. Add 1 cup water or as required to make thick yet flowing water. The amount of water required depends on the quality of flour, so add as required.
  5. Stir and then add 1 tbsp rava.
  6. Stir to a smooth thick batter without any lumps.
  7. The batter should be thick yet flowing. A quick tip is that if the batter become thin, then add 1 to 2 tbsp more sooji or rava or besan.
  8. Also bring to a boil 2 to 3 cups of water in a steamer pan or electric cooker or pressure cooker. 
  9. The amount of water to be added depends on the size of the steamer or pressure cooker.
  10. Then add 2 tsp eno fruit salt.
  11. Stir briskly and quickly. the fruit salt should be mixed evenly with the batter. or else you get uneven texture in the dhokla.
  12. The batter would froth and become bubbly, so you have to be quick.
  13. Pour the batter in the greased pan.
  14. Here's the dhokla batter ready to be steamed.

Tampering for khaman Dhokla

  1. In a small pan, heat 2 tbsp oil.
  2. Add 1 tsp mustard seeds and allow them to crackle.
  3. When the mustard seeds are crackling, add the 1 tsp cumin seeds, 8 to 10 curry leaves and 1/2 to 1 tsp chopped green chilli.
  4. Stir and then add 2 tsp sesame seeds.
  5. Fry till the sesame seeds change color. don't brown them.
  6. Then add 1/3 cup water. be careful while adding water as the mixture sizzles.
  7. Add 2 teaspoon sugar.
  8. Stir and allow the tempering mixture to come to a boil.
  9. Then pour this tempering mixture evenly on the khaman dhokla.
  10. Garnish with 2 tbsp chopped coriander seeds and 2 tbsp grated coconut.
  11. serve khaman dhokla straight away or you can store them in an air tight box and then serve later.
  12. if serving khaman dhokla later, then don't add coconut. you can also refrigerate them and while serving, just sprinkle some water and heat them in a microwave for few seconds.

Vada Pav Recipe


Ingredients for Vada 

Boiled Potatoes and peeled 6 larg
● Pav ( Bread slices) 8 small
● Oil 1 tablespoon
● Asafoetida (Hing) 1/4 teaspoon
● Salt to taste
● Turmeric 1/4 teaspoon
● Green chillies- garlic paste 1 tbsp
● Fresh coriander chopped 1/3 cup
● Lemon juice 1 tbsp

For making Batter

● Gram flour ( besan) 1/3 cup
● Red chilli powder 1/2 teaspoon
● Turmeric powder 1/3 teaspoon
● Salt to taste
● Soda bicarbonate a small pinch


Method for Dish

Step 1-

For making batter place the gram flour in a bowl. Add salt, red chilli powder, turmeric powder, soda bicarbonate and mix then add sufficient water and make a smooth and thick batter. Now put it aside at least for 12-15 minutes. Now place the boiled potatoes in a bowl.

Step 2-

Heat one tablespoon oil in a pan. Add asafoetida ( Hing), turmeric powder, green-chilli garlic paste and mix it. Add potatoes, salt and mix. Put it aside to cool. Now add coriander leaves, lemon juice and mix and also mash the potatoes some more.

Step 3-

Now divide the mixture into eight equal portions and make small balls.


Step 4-

Heat sufficient oil in a kadhai. Dip potato balls in the gram flour batter and deep fry till golden and crispy from the outside. Now put out on absorbent paper. Slit each pav, spread some dry garlic chutney, place a vada and press tightly.

Step 5-

Serve hot with chopped onions.

Masala Dosa Recipe


Ingredients needed for recipe

● Boiled Rice -1 1/2 cup 
● Raw rice - 1/2 cup
● Whole urad dal (without skin) -1/2 cup
● Fenugreek seeds -1/2 tsp
● Channa dal/bengal gram/- 2 tablespoon
● Tur dal - 1-2 tablespoon
● Salt to taste

Ingredients needed for the potato filling of Masala Dosa

● Potatoes - 600 gms /2 cups boiled and         mashed
● Onion -2 cup thinly sliced
● Ginger - 1 inch piece
● Green chilli - 3-4 (finely chopped)
● Tomato -1 small 
● Turmeric powder - 1/4 teaspoon
● Curry leaves - 6-7
● Salt to taste

Seasoning

● Oil -2 tbsp
● Mustard - 1 tsp
● Urad dal - 4/5 tsp
● Bengal gram/chana dal - 3/4 tsp
● Hing(Asafoetida) - a pinch
● Oil for making dosa 

Method

Soak boiled rice, raw rice, urad dal, fenugreek seeds, bengal gram, tur dal in enough water for 4-5 hours.

Wash and grind everything together to a smooth texture adding water, little at a time. Add needed salt and leave it overnight to ferment. The fermenting time differs according to the climatic conditions.

Before making dosa, add a teaspoon of sugar, little water and mix well to get the dosa batter consistency. The batter is ready to make masala dosa. Now we will see how to make filling for masala dosa (potato filling)

Preparation for Masala Dosa Filling

Wash and cut potatoes into half and cook in pressure cooker for 3 whistles. After it cools, peel the skin and mash it well.( not to a fine paste) Keep it aside.

Cut onions lengthwise, finely chop green chillies and ginger.

Method for making filling

Heat oil, add mustard seeds, when it splutters, add hing, urad dal and chana dal.

When both dal turns golden brown, add thinly sliced onions, green chilli, ginger and curry leaves. Saute for a few minutes until onion turns pink.

Add turmeric powder, chopped tomatoes and salt to taste

Add 1/2- 3/4 cup of hot water, when water starts boiling, add the mashed potatoes. Mix well and cook for few minutes (around 5-6 mins) until everything gets blended well. Do not add too much water, then the dosa will become soggy.

Switch off the flame. Our filling for the masala dosa is ready.

Method for Making Masala Dosa

Now we will prepare the masala dosa. Heat a non stick or iron tawa, add a drop of oil and rub half an onion on it. Once the tawa is heated, bring the flame to medium and pour a ladle of batter in the center.

Using the back of the ladle, spread the batter in a circular motion as seen in the picture below. Drizzle a tsp of oil around the dosa and close it with a lid. (masala dosa should not be thick)

Once the edges starts browning and the dosa is cooked, reduce the heat, add 2-3 tbsp of potato masala, a little butter and fold the dosa. Remove from tawa and serve hot.


Note - There is not need to cook the other side.

Crispy Bread Pakoda Roll Recipe

Ingredients for the Dish

● Boiled  Potatoes 
● Bread slices
● Sufficient oil
● Red chilli powder 1 teaspoon
● Coriander powder 1 teaspoon
● Garam Masala
● Eastern Masala
● Red chilli
● Dry mango powder
● Salt to taste

How to prepare 

Step 1-

Firstly boil potatoes and after that mix  garam masala, dry mango powder, eastern masala, red chilli powder, coriander podwer, red chilli, salt and mix well.

Step 2-

Now take bread slices. Apply water on bread slices and put the mixture on it.

Step 3-

Make rolls like this.

Step 4-

Heat sufficient oil in a pan. Now put the bread rolls in oil one by one.

Step 5-

After making brownish make them out from the oil.


Step 6-

Serve hot with the topping of curd, onions and tomato sauce.

How to make French Fries at home



Ingredients for the Recipe:


• Peeled potatoes and cut into fingers shape.
• Olive oil 1 tbsp
• Tomato puree 3 cup
• Tomato sauce
• Red chilli powder 1 tbsp
• Dry ginger powder 1 teaspoon
• Honey 1/3 cup
• Black salt
• Salt to taste
• Vinegar 1 tbsp

Method for the Dish

Step 1-

Boiled water in a non-stick pan. Add potatoes fingers and salt and cook till potatoe fingers are almost done. Strain.


Step 2-

Freeze the boiled the boiled potato fingers for 25 minutes and after that transfer into a zip lock bag and again freeze for 3 hours.


Step 3-

        To prepare tomato sauce

Heat tomato puree in another non- stick pan. Add honey, chilli powder, black salt, dry ginger powder and mix and cook on low heat till the mixture reduces and got thick.


Step 4-

Pre heat air- fryer upto 180°c.
Add olive oil to frozen potato fingers and mix well. Transfer into the air -fryer basket.

Step 5-

Put the basket into the pre heated air- fryer and air cook for 15 minute.

Serve hot with tomato sauce and green chilli sauce.

Veg Manchurian Fried Rice Recipe


Ingredients for the Dish:

• Cabbage finely chopped 1/3 cup
• Carrot finely chopped 1/3 cup
• Capsicum chopped 1/3 cup
• Bean sprouts 1/3 cup
• Soy sauce 2 tablespoon
• Vinegar 2 tablespoon
• Rice cooked 3 cups
• Black pepper powder for taste
• Refined flour 1 cup
• Red chilli sauce 2 tablespoons
• Oil 1tablespoon for deep- frying
• Chopped Garlic
• Ginger finely chopped 
• Green chillies finely chopped 2
• Onion finely chopped 
• Small piece of cabbage 1/3 cup
• Capsicum cut into thin slices 1/4 cup
• Coriander 
• Spring onion 
• Salt to taste

Method for the Dish

Step 1 - 
Now for prepare Manchurian balls we need to add finely chopped cabbage, Capsicum finely chopped, 1/3 cup bean sprouts, 1 tablespoon soy sauce, 1 tablespoon vinegar, black pepper powder, refined flour, 1 tablespoon red chilli sauce and mix these all ingredients in a bowl. Also add some water and knead well.

Step 2-
Now heat oil in a pan.

Step 3-
Divide the mixture in equal portion and make small balls.


Step 4- 
Deep fry each ball in hot oil on low heat and make them golden brown and crispy.

Step 5- 
Now for prepare Manchurian rice we need to heat 1 tablespoon oil in a non-sticky pan. Add ginger, garlic, green chillies and onion and sautè for a minute.

Step 6-
Add remaining 1/3 cup bean sprouts, small piece of cabbage, thin slices of Capsicum, remaining soy sauce, remaining vinegar, remaining red chilli sauce, black pepper powder and mix. Add fried Manchurian ball and 1/2 cup water mix it and cook for a minute. Now add salt according to taste and mix it.

Step 7-
Add cooked rice and also spread o top of Manchurian  balls mixture and cook for a minute and mix well. Also add spring onion to the pan. Switch off heat and mix well.

Step 8-
Serve hot topped with coriander sprigs.
